Burgers a la Pizzaiola

This recipe originated from a weekly email I receive from Giada De Laurentiis. I did not make the spread that is placed on the toasted buns; as we eat our "at home" burgers gluten-free. Not to say they would be totally "WOW" with the whole package. However, the burgers were absolutely spectacular on their own. I made two meals out of four of the burgers and froze the remaining two. The second meal was equally moist and tasty. Hopefully the frozen ones will be great to pull out for a lunch sometime. OK just pulled out of freezer, thawed in microwave and heated on grill. Yummy! Giada you rock!!!

Ingredients:

  • 3 garlic cloves, minced
  • 5 sun-dried tomatoes in oil, drained
  • 1/3 cup packed fresh basil leaves
  • 3 tablespoons grated Parmesan cheese
  • 3/4 cup grated mozzarella cheese
  • 1 tablespoon tomato paste
  • 1/2 teaspoon fresh ground pepper
  • 1 1/4 teaspoon kosher salt
  • 1/2 teaspoon red pepper flakes
  • 1 1/2 pound 95% lean ground beef
Directions:
In a food processor, pulse together the garlic, sun-dried tomatoes, basil leaves, Parmesan, mozzarella, tomato paste, pepper, salt, and red pepper flakes until well blended. Transfer to a large bowl, add the beef and mix with your hands until well combined.

Form mixture into 6 patties (about 1/2" thick) and create a small indentation into each center.

Heat the grill to medium-high heat; greasing the grates well. Grill for 4 minutes on one side. Flip and continue cooking another 4 minutes, until cooked through.
